
Dairy-Free Shrimp Bisque
A creamy, flavorful shrimp bisque made without dairy, perfect for chilly weather. This recipe includes shrimp, veggies, and coconut milk for a delightful taste, ideally served with crusty bread.
What you need

clove garlic

tsp ground cumin

fennel bulb

tbsp ghee

fresh lemon juice

tsp salt

cup water

tsp coconut sugar
fresh tomatoes

dash hot sauce

can light coconut milk

tbsp coconut aminos

onion

tsp fresh thyme leaves

tbsp tomato paste
Instructions
1: In a pot, heat ghee and sauté onion, fennel, and garlic until soft. 2: Add the red potatoes and shrimp shells, cook for a few minutes. 3: Pour in stock and water, bring to a boil and simmer for 15 minutes. 4: Remove shrimp shells, add light coconut milk, tomato paste, salt, thyme, hot sauce, coconut aminos, coconut sugar, and cumin. 5: Cook for an additional 5 minutes. 6: Blend the bisque until smooth.
