
Dairy-Free Tuna Mac and Cheese

tsp garlic powder

Instructions
1: In a large pot, boil about 4 cups of water or broth. 2: Boil the Yukon gold potatoes, carrots, and onion in the water for about 10-15 minutes until soft. 3: Save 3/4 cup of the water from the veggies once they are done. 4: Remove the veggies and place them in a blender with the raw cashews, coconut milk, lemon juice, nutritional yeast, salt, black pepper, garlic powder, and fresh dill. 5: Add the reserved water and blend until smooth. 6: Toss the cheese sauce with chick pea pasta, tomatoes, and Portofino tuna. 7: Serve over arugula.View original recipe
