
Dairy-Free Watermelon Greek Salad
A refreshing summer salad with cubed watermelon, avocado, cucumber, bell pepper, cherry tomatoes, red onion, black olives, and dairy-free feta cheese, paired with grilled Greek chicken marinated in a zesty lemon and herb dressing.
What you need

tbsp honey

cup black olives

clove garlic

english cucumber
cup red onion

tbsp fresh dill
avocado

watermelon
tbsp olive oil

tsp salt

tbsp dried oregano

cup lemon juice
Instructions
1: Cube the watermelon and avocado, chop the cucumber and bell pepper, slice the cherry tomatoes, and mince the red onion and garlic. 2: Combine all salad ingredients in a large bowl and toss with your choice of dressing. 3: In a separate bowl, mix together lemon juice, olive oil, fresh dill, dried oregano, minced garlic, honey, and salt. 4: Pour the marinade over the chicken breasts and let marinate for 30 minutes. 5: Grill the marinated chicken until cooked through and serve alongside the salad.View original recipe
