
Eggplant & Feta Roll-Ups
Delicious and satisfying eggplant roll-ups filled with creamy feta, fresh herbs, and served with a spicy tahini drizzle. These easy-to-make appetizers are perfect for a weeknight dinner or a healthy side dish.
What you need

bunch fresh dill
cup fresh parsley

tsp salt

tsp hot sauce

tbsp tahini

eggplant
tsp lemon zest
pepper

tsp water
fl oz olive oil

cup feta

pistachio

clove garlic
Instructions
1: Preheat the oven to 400°F. Line a sheet pan with parchment paper and set aside. 2: Drizzle olive oil onto the bottom of the sheet pan and sprinkle with salt and pepper. Spread the eggplant slices on the pan, drizzle with olive oil, and sprinkle with salt and pepper. Bake for 20 minutes, flipping halfway. 3: While baking, mix feta, parsley, garlic, lemon zest and pepper in a medium bowl. Mash until combined, then add the egg and mix again. 4: In a small bowl, whisk tahini and water until creamy, then add hot sauce. 5: Remove the eggplant from the oven, increase temperature to 425°F. Cool slightly, then fill each slice with 1-2 tablespoons of the feta mixture and roll them up. 6: Place the rolls back in the oven for 7-10 minutes.
