
Feta, Lemon & Herb Potato Salad

What you need

clove garlic
red onion
bunch cilantro

tbsp spicy brown mustard
bunch parsley

tbsp sugar

lb gold potatoes

cup fresh chives

tsp salt
lemon zest
tsp pepper
tbsp olive oil

tsp dried oregano

cup feta
Instructions
1: Bring a large pot of water to a boil, then add the salt and the potatoes. 2: Cook for about 10-12 minutes until the potatoes are tender. 3: Drain all of the water, but leave the potatoes in the pan to dry a bit. 4: In a large bowl, add the olive oil, red wine vinegar, sugar, mustard, oregano, salt, and pepper. Whisk to combine. 5: To the same bowl, add the cooked potatoes, parsley, cilantro, chives, red onion, feta, lemon zest, and garlic. 6: Toss the mixture until well combined.View original recipe
