
Feta, Pistachio & Mustard Crusted Salmon
This easy weeknight meal features salmon with a crunchy, flavorful crust of feta, pistachios, and mustard. It stays moist while baking, making it a perfect option to switch up your salmon preparation.
What you need

tbsp mustard
tbsp parsley

tsp salt
tsp lemon zest
tsp pepper

fl oz lemon juice

fl oz olive oil

tbsp scallion

oz feta

tbsp pistachio
Instructions
1: Preheat the oven to 400°F. 2: Add the parsley and scallions to a cutting board and chop finely. Mix in the feta, pistachios, lemon zest, salt, and pepper until combined. 3: Place the salmon on a baking sheet, pat the top dry, and brush with mustard. Spread the pistachio and feta mixture on top, pressing gently with a fork. 4: Drizzle with olive oil and lemon juice and bake for 18-20 minutes until cooked through.
