Feta Pistachio Salmon

What you need

tbsp mustard
fl oz olive oil
tsp pepper
tbsp parsley

tsp salt

lb salmon
tsp lemon zest

tbsp scallion

oz feta

tbsp pistachio nuts
Instructions
1: Preheat the oven to 400°F. 2: Add the parsley and scallions to a cutting board and chop finely. Mix in the feta, pistachios, lemon zest, salt, and pepper until uniform. 3: Place the salmon on a baking sheet, pat it dry, and brush the top and sides with mustard. Spread the pistachio and feta mixture evenly over the salmon, pressing lightly. 4: Drizzle with olive oil and fresh lemon juice. 5: Bake for 16-20 minutes, or until cooked to your liking.
