
Firecracker Salmon & Kimchi-Mayo
Delicious and flavorful Firecracker Salmon & Kimchi-Mayo Rice Bowls with a sweet, tangy, spicy, and sticky sauce. Perfect for a healthy meal over cauliflower rice, inspired by @kalememaybe.
What you need

tsp garlic powder

tbsp greek yogurt

tbsp soy sauce

tbsp sriracha

rice
cup mayonnaise
tbsp honey

cilantro
tbsp fish sauce
tbsp mayo

tbsp avocado oil

lb salmon
tbsp apple cider vinegar
Instructions
1: Make Kimchi Mayo by mixing together mayonnaise, Mayo, Greek yogurt, kimchi, and kimchi liquid. 2: For the sauce, mix together fish sauce, apple cider vinegar, honey, soy sauce, sriracha, and garlic powder in a small bowl. 3: Pat the salmon dry and season with salt and pepper. 4: Heat avocado oil over medium high and sear the salmon skin side up for 3 minutes without moving it. 5: Pour the sauce into the pan, reduce heat to medium, and cook for another 1 minute. 6: Flip the salmon and cook for another 3-4 minutes, spooning the sauce over the salmon as it cooks. 7: Turn off the heat. Optional: add cucumber slices and sliced hot chili peppers and toss to coat. 8: Serve over rice with avocado, cucumbers, sliced chili peppers, jalapeños, cilantro, scallions, and sesame seeds.
