tbsp cilantro

tsp salt

tbsp olive oil
cup ricotta
tbsp ghee

Instructions
1: Heat olive oil over medium high and add chopped onion, sauté for 3 minutes until softened. 2: Add minced garlic and sauté until fragrant (about a minute). 3: Add cauliflower rice and sauté for about 4 minutes. 4: Stir in spinach, salt, pepper, ricotta, and dairy-free creamer. Cook until combined and liquid is absorbed. 5: For the shrimp, season thawed shrimp with salt and pepper. 6: In a pan over medium high, add ghee and shrimp, sauté for 2 minutes on one side. 7: Flip shrimp, add coconut aminos, minced garlic, and chopped cilantro.
