
Garlic-Balsamic Roasted Portobellos
Tender and flavorful portobellos topped with a creamy, tangy avocado and feta salsa, making a perfect side dish or healthy meal.
What you need
avocado

tbsp capers
red onion
tbsp fresh parsley

clove garlic
tbsp olive oil
tsp lemon zest

tsp salt

fl oz lemon juice

tbsp fresh cilantro
tsp pepper

oz sunflower seed

cup feta

portobello mushrooms
Instructions
1: Preheat the oven to 425°F. 2: Mix the olive oil, balsamic vinegar, garlic, salt, and pepper in a small bowl. 3: Place the portobellos onto a plate, spoon the oil mixture over the top and brush to coat, then spoon over the bottom and brush to coat. 4: Heat a large oven-safe sauté pan over medium-high heat. Add a drizzle of olive oil and place the mushrooms stem side up. Sear for 2-3 minutes, then flip. 5: Transfer the pan to the oven and roast for 17-20 minutes, flipping again after about 13 minutes. 6: While the portobellos roast, make the salsa by mixing the avocado, parsley, cilantro, onion, capers, feta, salt, pepper, lemon zest, lemon juice, and olive oil. 7: Slice the roasted portobellos and place them on a plate.
