What you need

clove garlic

gold potatoes

tsp salt

cup fresh parsley

tsp chipotle chili powder
oz ricotta

tsp cumin

cup scallion

cup gruyere

pistachio
Instructions
1: Preheat the oven to 400°F. 2: Make the butter mix by adding the butter, garlic, cumin, and chili powder to a small dish and mixing to form a paste. 3: Place the potatoes in a muffin pan, cutting each potato into 4 wedges and placing one whole potato in each muffin cup. 4: Divide the butter mix equally between the 6 potatoes, adding a small spoonful to the center. Season with salt and pepper and press the wedges together using the butter as a 'glue.' 5: Place the muffin tin in the oven for 55-65 minutes, until the potatoes are tender and the top edges are crisp. 6: Remove the potatoes from the oven and add a couple tablespoons of cheese to each potato center. 7: Place the potatoes under the broiler for about 4 minutes, until the cheese is melted. 8: Top each potato with a little ricotta, parsley, scallions, and optional pistachios.View original recipe
