tsp salt
bunch kale
avocado
lemon zest
pinch pepper

cup parmesan

tsp lemon juice

tbsp capers

tsp dried oregano

tsp garlic

cup feta

tsp granulated onion
Instructions
1: Preheat the oven to 400°F and line a sheet pan with parchment paper. 2: Massage olive oil into the kale in a large bowl, then add salt, oregano, pepper, lemon zest, and parmesan. Toss to coat and spread on a baking sheet to roast for 14-17 minutes, tossing after 8 minutes. 3: While the kale is roasting, combine mustard, honey, garlic, lemon juice, salt, and pepper in a small bowl. In a larger bowl, mash together the avocado, feta, parsley, capers, lemon juice, salt, and pepper. 4: Pat the salmon dry, season with salt and pepper, and place it on the sheet pan with parchment paper. Top with the honey-mustard mixture and onion granules, then roast for 8 minutes. 5: Broil the salmon for 2-3 minutes. 6: Serve the salmon topped with the avocado mash, crispy kale, parsley, red onion, feta, and honey if desired.View original recipe
