Instructions
1: Preheat the oven to 450°F. Add a large sheet pan to the oven while it preheats. 2: Make the oil. Add the olive oil, garlic, lime zest, cumin, salt, and paprika to a small bowl. Mix to combine into a thick oil paste. 3: Add the cauliflower to a mixing bowl, then add the oil and toss until all florets are well coated. Spread the cauliflower onto the sheet pan, making sure that it is spread apart. Place it in the oven for 25-28 minutes, tossing halfway. 4: While the cauliflower roasts, make the sauce. Add the olive oil, honey, lime juice, cilantro, jalapeño, and salt to a small saucepan. Heat the mixture over medium-high heat for about 2 minutes until it begins to bubble. Remove it from the heat and set aside. 5: Add the yogurt to a small bowl with a pinch of salt and mix until creamy. 6: Spread the yogurt onto a plate, top it with the cauliflower, the sauce, a drizzle of extra honey, and some pistachios, if desired.View original recipe
