
Giant Iced Oatmeal Cookie
A vegan and gluten-free version of the classic Mother's iced oatmeal cookies, made with real food ingredients. Perfect for those moments when you want a smaller batch, yet satisfying enough to enjoy on your own.
What you need

tsp cinnamon

pinch salt

tbsp maple syrup

cup quick oats

cup powdered sugar

cup almond milk

tsp baking soda

tbsp rice flour

tbsp almond butter
Instructions
1: Mix dry ingredients: quick oats, white rice flour, cinnamon, baking soda, and salt together. 2: Add wet ingredients: creamy almond butter and maple syrup, and mix together with a fork. 3: Spread the mixture on some parchment paper and bake at 350°F for 14 minutes. 4: Allow to cool then drizzle icing made from powdered sugar and almond milk, or melted coconut butter with maple syrup.View original recipe
