
Grain Free Shrimp Scampi
A favorite meal featuring shrimp sautéed with garlic, lemon, and herbs, served with spiralized sweet potato noodles and topped with a homemade parsley arugula pesto.
What you need
pinch pepper
tbsp ghee

clove garlic

pinch salt

tbsp lemon juice
cup cilantro
cup parsley
cup broth

cup arugula
Instructions
1: Sauté 4 cloves of garlic in 1 tablespoon of olive oil and 1 tablespoon of ghee for about a minute. 2: Add 1/2 cup of broth, some pepper, and red pepper flakes and reduce to about half the amount for about 3 minutes. 3: Pour in a pound of shelled shrimp and sauté until cooked through for about 2 minutes. 4: Remove shrimp and add 1 tablespoon of lemon juice and 1/4 cup of chopped parsley and cilantro. 5: Cook down a bit and then pour the sauce over the shrimp. 6: For the pesto, blend 1/2 cup of parsley, 1/2 cup of arugula, 1 clove of garlic, 1 tablespoon of lemon juice, 1/4 cup of olive oil, a pinch of salt, and a pinch of pepper until smooth.View original recipe
