Instructions
1: Preheat oven to 425°F. 2: Toss chopped red potatoes, cherry tomatoes, olive oil, zaatar seasoning, and salt. 3: Spread the mixture in a cast iron or oven-safe skillet. 4: Roast for 18-20 minutes. 5: Remove tomatoes and roast potatoes for another 5-10 minutes. 6: Remove from oven, toss potatoes with the roasted tomatoes, arugula, feta, and olives. 7: Top with fried eggs before serving.View original recipe
