
Grilled Italian Mozzarella Chicken
This easy and light meal features grilled chicken breast with mozzarella balls, paired with a refreshing Dijon balsamic tomato avocado pasta salad, perfect for the 4th of July. Kid-approved and tasty!
What you need

cup olive oil

tbsp honey

Instructions
1: Pound the chicken breast thin using a mason jar. 2: Season the chicken with salt, pepper, oregano, basil, and garlic powder. 3: Brush the chicken with olive oil. 4: Grill the chicken on each side for about 4 minutes. 5: In the last 2 minutes of grilling, add mozzarella balls on top and cover. 6: Top the grilled chicken with fresh basil and balsamic vinegar. 7: For pasta, cook the chickpea pasta according to package instructions. 8: In a bowl, mix together the chopped cherry tomatoes, scallions, and avocado. 9: In another bowl, whisk together olive oil, balsamic vinegar, coconut aminos, honey, Dijon mustard, minced garlic, salt, and pepper. 10: Toss the pasta with the vegetable mixture and dressing. 11: Optional: Top with red pepper flakes and hemp seeds.View original recipe
