
Healthy Summer Ranch Pasta Salad
A refreshing and easy-to-prepare pasta salad tossed with summer veggies and halloumi. This healthy dinner idea combines boiled pasta with sautéed vegetables in a tangy dressing made from Greek yogurt, ranch seasoning, and olive oil.
What you need

tsp mustard

cup sour cream
pepper

salt

tbsp olive oil
zucchini

box pasta
cup greek yogurt
Instructions
1: Make the dressing at least 30 minutes before serving. In a bowl, combine the Greek yogurt, ranch seasoning, sour cream, mustard, salt, and pepper. Whisk to combine. 2: Heat olive oil in a medium sauté pan over medium heat. 3: Once hot, add the sliced onions, zucchini, and mushrooms. Sauté for about 4 minutes, tossing occasionally until cooked but slightly crisp. 4: Remove the veggies and place them on a plate. 5: Add the sliced halloumi to the same pan and sear on each side for about 1 minute. Remove and set aside. 6: In a larger bowl, combine the cooked pasta, sautéed veggies, and dressing.
