
High Protein Spinach & Egg Wraps

What you need

tsp salt

tbsp capers

lemon juice

oz cream cheese

tsp dried dill
Instructions
1: Preheat oven to 375°F. Line 9x13 sheet pan with parchment paper, overlapping the sides. 2: Make the wraps. Add eggs, spinach, potato starch or cornstarch, and a pinch of salt to a blender and blend until smooth. Pour mixture into sheet pan and spread to the edges. Bake for 10-12 minutes until cooked through. Let it cool. 3: Prepare cream cheese. Mash cream cheese in a bowl, then add smoked salmon and mash together. Include chopped capers, salt, dill, and lemon juice and whisk until creamy. Refrigerate until ready to use. 4: Lift the edge of the egg wrap from the sides of the pan and peel away from the paper. Slice into 4 equal rectangles. 5: Assemble wraps by placing a rectangle on a plate, spreading 1/4 of the cream cheese onto the wrap and topping with a tablespoon of tomatoes and onions. Fold and roll into a long wrap. Repeat with remaining wraps. 6: Slice each wrap into 4 pieces and top with capers, dill, and spicy mayo if desired.View original recipe
