
Honey Butter Cauliflower
Delicious honey butter cauliflower with roasted garlic whip and a lemon-cashew-scallion crumble. This dish is a flavorful vegetarian side that is perfect for any meal. Simply roast cauliflower and top it with a rich garlic whip and a crunchy crumble for added texture.
What you need
tbsp olive oil
cup ricotta cheese

tbsp honey

roasted garlic

tsp salt
head cauliflower

cup plain greek yogurt
tsp lemon zest

tbsp lemon juice

tbsp butter

tsp dried oregano
pepper

cup raw cashews

cup scallion
Instructions
1: Preheat the oven to 425°F. Line a sheet pan with parchment paper and set aside. 2: Make the butter. Add all ingredients for butter to a bowl and mix to combine. Add the cauliflower to the sheet pan, add the butter and roast for 30-35 minutes, tossing halfway. 3: While the cauliflower roasts, make the crumble. Combine the cashews and the scallions on a cutting board and chop together. Add the lemon zest, salt, pepper, and olive oil and chop until well combined. 4: Make the whip. Add all ingredients for the whip to a food processor and process until smooth. 5: Spread the whip on a plate, top with the cauliflower, then the crumble.
