
Honey-Garlic Butter Sweet Potato Bites

What you need
bay leaves

fl oz honey
tbsp fresh parsley

tsp salt

tbsp garlic oil
tsp pepper
cup olive oil
tsp peppercorn
sweet potato

tbsp garlic clove

tbsp pistachio

tbsp goat cheese
Instructions
1: Preheat the oven to 400°F and line a sheet pan with parchment paper. 2: Make the garlic confit by adding oil, garlic, pepper, and bay leaves to a small pan. Cook on low heat for 40 minutes. 3: Brush both sides of the sweet potatoes with the confit oil and place them on the sheet pan. Bake for 10 minutes. 4: Prepare the garlic butter by mixing butter, oil, garlic, honey, salt, pepper, and parsley. Set aside in the freezer to thicken. 5: Remove sweet potatoes from the oven, flip them, and spoon the garlic butter onto each round. Cover with foil and bake for 25-30 minutes. 6: Remove the foil after 10 minutes and continue to bake until tender. Optionally broil for 2 minutes to brown the tops. 7: Top the roasted sweet potatoes with parsley, pistachios, goat cheese, and honey. 8: Store any leftover garlic confit in the fridge.View original recipe
