
Honey-Garlic Scallops
Delicious honey-garlic butter scallops served over creamy ricotta cauliflower grits. Perfectly seared scallops with a touch of sweetness from honey and freshness from lemon, accompanied by garlicky broccolini.
What you need

Instructions
1: Pat the scallops dry and season generously with salt and pepper. 2: Make the sauce by combining honey, coconut aminos, lemon juice, and a dash of paprika in a small bowl. 3: Heat ghee over medium high and add the scallops, spreading them out. 4: Sear the scallops for 2 minutes, then flip. 5: Add the sauce to the pan and cook the scallops for another 2 minutes. 6: Turn off heat and spoon the sauce over the scallops, flipping them to coat. 7: For the grits, heat olive oil over medium high and add the chopped onion; sauté for 3 minutes until softened. 8: Add minced garlic and sauté for about 1 minute until fragrant. 9: Add thawed cauliflower rice and sauté for about 4 minutes. 10: Add salt, pepper, additional garlic, dairy-free ricotta, and dairy-free creamer. 11: Mix together and cook until the ricotta is mixed well and liquid is absorbed.View original recipe
