
Honey-Lemon-Dill Salmon
A flavorful slow roasted honey-lemon-dill salmon topped with a delicious artichoke, Parmesan, and pine nut salsa. This dish serves 6-8 and is perfect for any seafood dinner.

cup red onion

cup parmesan cheese

tbsp honey
lemon

tbsp capers

tsp salt

cup artichoke hearts
lemon zest
tsp pepper
cup fresh parsley

fl oz lemon juice

oz butter
cup currant

tsp sugar

lb salmon

cup pine nut
Instructions
1: Preheat the oven to 275°F. Line a sheet pan with parchment paper and set aside. 2: Line up the lemons on the baking sheet in a rectangle. 3: Place the salmon on top and then season with salt and pepper, squeeze the lemon juice over the salmon, and finally drizzle with honey. 4: Place in the oven for 30 minutes. 5: While the salmon roasts, make the salsa by adding all the salsa ingredients to a medium bowl and mix well to combine. 6: Serve the salmon topped with the salsa.View original recipe
