
Hot Honey Salmon Tacos

What you need

tsp paprika

fl oz lime juice

tsp salt
cup red onion
tsp pepper
fl oz olive oil

tbsp cumin

bunch scallion

cup fresh corn kernels

tortilla

tbsp honey
cup cilantro
avocado

Instructions
1: Preheat the oven to 400°F. Line a sheet pan with parchment paper and set aside. Add the salmon to the sheet pan, then season with salt, cumin, pepper, and drizzle with hot honey. Brush the honey evenly over the salmon. Sprinkle jalapeños on top, drizzle with olive oil, then place the salmon in the oven for 9-12 minutes, until almost cooked through. Broil for about 2 minutes to finish cooking. 2: While the salmon is cooking, make the guacamole. Heat a sauté pan over medium-high heat. Add olive oil, corn, a pinch of salt, and paprika. Sauté for 2-3 minutes until it begins to brown. Remove from heat. 3: In a bowl or molcajete, combine avocado, onion, cilantro, jalapeños, cumin, salt, and pepper. Mash together. Add lime juice, garlic, and sautéed corn, then mash again until creamy. 4: To assemble the tacos, add a scoop of guacamole to a tortilla, followed by a chunk of salmon.
