
Italian Potato, Kale and Tomato Hash
A one-pan skillet Italian hash made with potatoes, kale, and tomatoes, topped off with eggs, goat feta, and avocado. Perfect for a delicious brunch. Easy to make with simple ingredients, leftovers are just as good!

Instructions
1: Add ghee or oil to a cast iron skillet and heat on medium high. 2: Add chopped onion and sauté for about 2 minutes. 3: Reduce to medium and add chopped potatoes. Season with salt, onion powder, garlic powder, pepper, dried thyme, dried oregano, dried basil, and paprika. 4: Stir and cover for about 5 minutes, stirring once or twice. 5: Add chopped kale, garlic, and grape tomatoes, then mix together. 6: Cover again for about 4-5 minutes, stirring a couple of times until the tomatoes are soft. 7: Top with eggs, feta or dairy-free cheese, and avocado, then garnish with parsley.View original recipe
