
Kale Caesar with Tahini Dressing
A delicious kale salad featuring addictive crispy spiced chickpeas and a creamy tahini-yogurt dressing, perfect for a healthy meal or side dish.
What you need
tsp pepper
tbsp olive oil

tsp onion powder

tbsp lemon juice
tbsp greek yogurt

tsp dijon mustard

tsp dried oregano

tbsp water

tsp salt
bunch kale

tbsp sugar

cup tahini

tsp garlic powder

tsp paprika

cup parmesan cheese

tsp garlic

can chickpea

cup pistachio nuts
Instructions
1: Preheat the oven to 350°F. Line a sheet pan with parchment paper and set aside. 2: Add tahini, salt, onion powder, garlic powder, and paprika to a bowl and mix to combine. Add chickpeas and toss to coat. 3: Spread chickpeas on the sheet pan and bake for 27-33 minutes until crisp. Let them sit for ten minutes. 4: While chickpeas roast, make the dressing by adding all ingredients to a bowl and whisking to combine. 5: For the salad, add kale to a bowl with olive oil, salt, and pepper. Massage the kale. 6: Add the dressing to the kale and toss to coat. Add Parmesan and toss to coat again. 7: Top the salad with crispy chickpeas and chopped pistachios.View original recipe
