
Kale Sweet Potato Salad
This wilt-free Kale, Sweet Potato & Crispy Shallot Salad is simply addictive and serves 4-6 people. The salad features a flavorful dressing made with olive oil, tahini, lemon juice, and seasonings, tossed with roasted sweet potatoes, crispy shallots, fresh kale, toasted walnuts, grated Parmesan cheese, and chopped dates.
What you need

tsp salt

tbsp lemon juice

tbsp water

tsp cumin

tsp garlic powder
pepper

cup olive oil

tbsp tahini
tsp lemon zest

cup parmesan cheese
cup kale
Instructions
1: Preheat the oven to 450°F. 2: Make the dressing by whisking together olive oil, tahini, lemon juice, 2 tablespoons of water, salt, and pepper in a small bowl until smooth. Adjust consistency with additional water if needed. 3: Add sweet potatoes to a large sheet pan, coat with olive oil, salt, garlic powder, paprika, and cumin. Toss well and roast in the oven for 20-25 minutes, tossing halfway. 4: Make the shallots by heating olive oil in a large skillet over medium-high heat, adding shallots. Sauté for 6-7 minutes, then reduce heat and brown for another 6-7 minutes. Remove and blot on paper towels. 5: Assemble the salad by combining kale, roasted sweet potatoes, walnuts, Parmesan, dates, and lemon zest in a large mixing bowl. Add shallots and toss together, adding dressing to your liking. 6: Serve the salad with extra Parmesan and dressing if desired.View original recipe
