
Kale, Sweet Potato & Shallot Salad
A wilt-free and addictive kale salad featuring sweet potatoes, crunchy walnuts, and crispy shallots, all brought together with a flavorful dressing.
What you need

cup parmesan cheese

tsp garlic powder

tsp salt
cup kale

tbsp tahini
tsp lemon zest
pepper

tbsp lemon juice

tbsp water
cup olive oil

tsp cumin
shallot
sweet potato

cup medjool dates
cup walnut
Instructions
1: Preheat the oven to 450°F. 2: Make the dressing. Whisk olive oil, tahini, lemon juice, 2 tablespoons of water, salt, and pepper until smooth. Add more water if needed. 3: Use leftover shallot oil to make a total of 5 tablespoons of olive oil. 4: Add sweet potatoes to a large sheet pan and toss with olive oil, salt, garlic powder, paprika, and cumin. Roast for 20-25 minutes, tossing halfway. 5: Heat olive oil in a large skillet and sauté shallots for 6-7 minutes, then reduce heat and cook for another 6-7 minutes until browned. Remove and drain on paper towels. 6: Assemble the salad by combining kale, sweet potatoes, walnuts, Parmesan, dates, lemon zest, and shallots in a large mixing bowl. Toss with dressing to combine. 7: Serve with extra Parmesan and dressing if desired.View original recipe
