
Loaded Sweet Potatoes
Delicious loaded sweet potatoes topped with asparagus, kale, avocado, egg, and pickled onions. A great dish for any meal.
What you need

cup apple juice
kale

asparagus

tsp salt

cup apple cider vinegar
egg
Instructions
1: Pressure cook sweet potatoes for 22 minutes on high in the pressure cooker on a rack above water, or bake them. 2: Steam kale and sauté asparagus until tender. 3: Mash the avocado. 4: Hard boil the egg. 5: For the pickled onions, slice red onions thinly. 6: Heat 1/4 cup apple cider vinegar, 1/4 cup apple juice, and 2-4 tablespoons beet juice with 1/2 teaspoon salt until boiling. 7: Add the sliced onions and reduce heat for about 5 minutes. 8: Assemble the loaded sweet potatoes with kale, asparagus, avocado, hard boiled egg, and pickled onions.View original recipe
