cup cauliflower rice

tbsp fish sauce

lb ground beef

tbsp ginger

Instructions
1: Preheat the oven to 400°F. 2: In a large bowl, combine ground beef, salt, pepper, red pepper, cauliflower rice, onion, cilantro, ginger, and garlic. Mix well. 3: Form the mixture into meatballs, about 1 inch in size, and place them on a baking sheet. 4: Bake meatballs in the oven for 20 minutes. 5: While the meatballs are baking, heat coconut oil in a skillet over medium heat. 6: Add sliced bell peppers, sliced onion, and minced ginger to the skillet, sautéing for 5 minutes. 7: Stir in coconut milk, red curry paste, fish sauce, coconut aminos, chopped mango, and coconut sugar.
