
Maple-Chipotle Butter Cauliflower
Slow roasted (grilled) maple-chipotle butter cauliflower served with a tahini-lime sauce, offering a delicious blend of spices and flavors. The cauliflower can be grilled for a slight crunch or blanched for a softer texture, and it is topped with sauce, cilantro, pistachios, and maple syrup.
What you need

tbsp unsalted butter

tbsp lime juice

tbsp maple syrup

tsp salt

cup tahini

head cauliflower

pepper

tsp chipotle chili powder

tbsp water

tsp cumin

pistachio

tbsp cilantro

clove garlic
Instructions
1: Preheat the grill to medium heat. 2: Make the butter by adding the butter, maple syrup, cilantro, salt, chili powder, paprika, cumin and garlic to a small bowl. Mash and mix well. 3: Spread the butter over the surface of the cauliflower and place it on the grill on the top rack. Roast for 45-55 minutes, covering with foil halfway through. 4: While the cauliflower roasts, make the sauce by whisking tahini, water, lime juice, cumin, garlic, salt and pepper until smooth. 5: Serve the cauliflower topped with the sauce, cilantro, pistachios, and maple syrup.View original recipe
