
Marinated Beet & Cucumber Salad

What you need
cup ricotta cheese
cup red onion

cup fresh dill
tbsp olive oil

tsp black pepper

tbsp honey
cup greek yogurt
lemon zest

tsp salt

tbsp dried dill

tsp dijon mustard

tbsp feta

cup pistachio
cup cucumber
cup beet
Instructions
1: Make the dressing. Add olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper to a small bowl. Whisk to combine and set aside. 2: Make the salad. Add beets, cucumbers, onions, and dill to a medium bowl. Add the dressing and toss to coat. 3: Make the whipped ricotta and feta. Add ricotta, feta, yogurt, dill, salt, and pepper to a food processor and process until mostly smooth. 4: Spread the ricotta mixture into the bottom of a bowl.
