
Mediterranean Shrimp Pitas
Delicious Mediterranean shrimp pitas made with honey lemon olive oil shrimp, creamy roasted garlic hummus, and topped with crispy chickpeas. Perfect for a dinner spread and paired with chickpea puffs!
What you need

lb shrimp
tbsp warm water

tbsp lemon juice

pinch paprika
tsp lemon zest

tbsp tahini
tbsp olive oil

tsp salt

tsp honey
Instructions
1: Add 1 pound peeled and thawed shrimp to boiling salted water and turn off heat. 2: Remove after 3 minutes, and place shrimp in ice water. 3: After cooling, pat dry, place in a bowl and toss with 1 tablespoon olive oil, 2 teaspoon honey, 1/4 teaspoon salt, pinch of red pepper, and 1/2 teaspoon lemon zest. 4: For the hummus, process or blend 1 can drained chickpeas (with skins removed), 2 tablespoon tahini, 2 tablespoon olive oil, 5 tablespoon warm water, 1 tablespoon lemon juice, 1/4 teaspoon salt, pinch of paprika, and the flesh of 1 head roasted garlic until smooth. 5: To roast the garlic, cut the top off the garlic head, place in tinfoil, drizzle with 1 teaspoon olive oil, wrap in foil, and roast for 40 minutes.View original recipe
