
Mediterranean Sweet Potato Salad
A delicious Mediterranean-inspired salad featuring roasted sweet potatoes, creamy white bean ranch, and fresh vegetables. Perfect as a side dish or healthy meal!
What you need

tsp onion powder

cup fresh dill
lemon
tbsp olive oil

tbsp water

tsp salt

can cannellini beans

tsp dried dill

cup feta

cup cherry tomato
sweet potato

oz pine nut

cup pickling cucumbers
Instructions
1: Preheat the oven to 425°F. Line a sheet pan with parchment paper and set aside. 2: Add the sweet potatoes to a bowl with the olive oil, salt, dill, and onion powder. Toss to combine, then place them on the sheet pan, spread out. Bake for 25 minutes, flipping halfway. Optional to peel away the skin. 3: Make the salad. Add the beans, tomatoes, cucumber, dill, lemon juice, a drizzle of olive oil, salt, and pepper. Toss to combine. Set aside. 4: Make the ranch puree. Add the beans, olive oil, water, lemon juice, dill, onion powder, and salt to a food processor and process until smooth. 5: Spread the ranch onto a plate, top with the sweet potatoes, then the salad mix, feta, and pine nuts.View original recipe
