
Mediterranean Sweet Potatoes
This dish features sweet potatoes topped with an olive-feta salad, spiced chickpeas, and a honey-tahini sauce. It's a flavorful and nutritious meal that's perfect for any occasion.
What you need

lemon juice
cup olive oil

clove garlic
tsp lemon zest

arugula

tsp paprika

tsp salt

water
cup parsley

cup feta
cup onion

tsp garlic powder

tsp onion powder

tbsp tahini
Instructions
1: Preheat the oven to 425°F. Line 2 sheet pans with parchment paper and set aside. 2: Drizzle olive oil on the bottom of one sheet pan, season with salt and place the sweet potatoes face down. Drizzle the tops with oil and season with salt. Bake for about 45-55 minutes, flipping after 20-25 minutes. 3: For the chickpeas, combine all chickpea ingredients in a bowl and toss to coat. Place on the other sheet pan and bake for 15-19 minutes, tossing halfway. 4: For the olive-feta salad, combine all ingredients except arugula in a bowl and toss to combine. Add arugula and toss again. 5: For the tahini, mix tahini and honey, then add water 1 tsp at a time until desired consistency is reached. 6: Once sweet potatoes are done, smash each one gently to create a cavity.
