Easy but tasty toast ideas for the weekend featuring combinations like mushrooms and garlic, ricotta and roasted tomatoes, or shrimp/halloumi and eggs for a delightful meal. Each recipe includes sautéed mushrooms, a creamy garlic honey spinach spread, roasted cherry tomatoes, and fresh toppings for the toast.

Instructions
1: Sauté 1 pound of mixed mushrooms in 1 tablespoon of olive oil or butter or ghee over medium high for about 4-5 minutes. 2: Season with salt and pepper, sauté for another minute or two, then add 1 tablespoon of balsamic vinegar and toss. 3: Turn off heat after the liquid has reduced. 4: Mix together the creamy garlic honey spinach spread: combine 1/2 cup dairy free Greek style yogurt, 2 tablespoon tahini, 2 teaspoon honey, 1/4 to 1/2 teaspoon salt, 2 cloves minced garlic, 1.5 teaspoon lemon juice, 1/2 teaspoon apple cider vinegar, and 1/4 cup cooked spinach until smooth. 5: For the roasted tomatoes, toss 1 pint cherry tomatoes with 1 tablespoon olive oil, 1/4 teaspoon salt, pinch of pepper, 2 tablespoon chopped fresh dill, and 2 cloves minced garlic. 6: Place cherry tomatoes in an oven safe pan or sheet pan and roast at 375°F for about 25-30 minutes. 7: Prepare the arugula with lemon, olive oil, and more salt/pepper. 8: Fry halloumi until golden brown, and cook shrimp by thawing, boiling for two minutes, then tossing in a mixture of date syrup and mustard before air frying for one minute at 400°F. 9: Top toasted sourdough with creamy spread, roasted tomatoes, and fried halloumi or shrimp, and finish with peach slices.View original recipe
