
One Pan Creamy Spinach Tomato Curry

Instructions
1: Pat dry and season 1 pound Arctic Char with salt and pepper. 2: In a pan, sear the fish skin side up in 1 tablespoon of oil over medium heat. 3: Flip the fish and cook for an additional 4 minutes without moving it. 4: Remove the fish from the pan and set it on a plate. 5: Add 1 small chopped onion and 2 chopped garlic cloves to the same pan and sauté for 3 minutes. 6: Stir in 1 cup of coconut milk, 1/2 cup of frozen spinach, 1/2 cup of diced canned tomatoes, 2 teaspoons of curry powder, 1/2 teaspoon of salt, 2 teaspoons of lime juice, 2 tablespoons of cilantro, 1 teaspoon of date syrup, 1 teaspoon of sriracha, and 1/2 teaspoon of tamari soy sauce. 7: Allow the mixture to cook down for about 10 minutes. 8: Add the fish back into the pan and simmer for 5 minutes before serving.View original recipe
