Instructions
1: Cut cassava and coconut flour tortillas into triangles. 2: Lightly fry the tortilla pieces in avocado oil. 3: Brush the fried tortillas with chipotle sauce. 4: Assemble the chilaquiles by topping the tortillas with spinach, arugula, red cabbage, roasted peppers, onion, chicken, mushrooms, zucchini, cilantro, avocado, and tomato. 5: Drizzle sriracha on top if desired.View original recipe
