
Paleo Salted Caramel Cinnamon Roll Cookies
These delicious paleo cookies are a healthy treat for the holidays, featuring a cake-like texture and loaded with protein. They are made with almond butter, eggs, coconut flour, and caramel protein powder, offering lower sugar than traditional cookies. Perfect for a make-ahead breakfast, these cookies can also be topped with coconut butter or powdered sugar icing.
What you need

cup coconut sugar

tsp baking soda

tbsp almond butter

tsp cinnamon

tsp salt

tbsp coconut flour
Instructions
1: Mix all ingredients well with a hand mixer or stand mixer. The batter will be slightly gooey. 2: Allow batter to sit for 10 minutes. 3: Preheat oven to 350°F. 4: While batter is resting, mix together all ingredients for the cinnamon filling in a small bowl. 5: After ten minutes, wet hands and scoop a ball of batter rolling into a ball. 6: Place on parchment paper, about 2 inches in between each cookie. 7: Press down with wet fingers to flatten. 8: Spoon the cinnamon mixture into a zip loc bag and cut off a small corner to create a cinnamon swirl on each cookie. 9: Bake for 12 minutes. 10: Remove from oven, gently press a pecan in the middle of each cookie if desired. 11: Allow to cool for 10 minutes. 12: Once cooled, heat some coconut butter to ice the cookies, or use a powdered sugar icing for a non-paleo option.View original recipe
