
Paprika Cauliflower Tacos
Delicious tacos featuring roasted cauliflower and sweet potatoes, paired with zesty chickpeas and a creamy avocado dressing.
What you need

fl oz lime juice

tsp onion powder
tbsp olive oil

tsp salt

cup cauliflower florets

cup sour cream

tsp sugar

tsp cumin

bunch fresh cilantro

lime zest
tsp pepper
cup shredded cheese

tsp dried oregano
sweet potato

corn tortilla
avocado
tbsp cilantro

can chickpea
Instructions
1: Preheat oven to 425°F. 2: Mix the spices for the cauliflower and sweet potatoes in a small bowl. Toss with cauliflower and sweet potatoes in olive oil and spice mix, then spread on a lined sheet pan and roast for 25-30 minutes. 3: For the chickpeas, mix in a bowl with olive oil, sugar, spices, cilantro, and lime zest. Toss to coat and roast for 16-18 minutes on a lined sheet pan until browned. 4: To make the crema, blend all ingredients in a food processor until smooth. 5: Assemble the tacos. Heat tortillas in the microwave for 30 seconds. Drizzle a sheet pan with oil, add tortillas, rub both sides with oil. Fill each tortilla with cheese and veggies and bake for 5 minutes. 6: After 5 minutes, fold and press down the tortillas, add more cheese on top and roast for another 10 minutes. 7: Flip the tacos and roast for an additional 5 minutes. 8: Open each taco, add a spoonful of chickpeas, and serve with the crema.View original recipe
