
Peanut Butter Yogurt Mousse

What you need

cup maple syrup

tbsp peanut butter

cup milk

tsp coconut oil

tbsp instant vanilla pudding

cup nonfat greek yogurt

Instructions
1: Add the yogurt, 6 tablespoons of the peanut butter, the maple syrup, milk and pudding mix to a bowl. Whisk until smooth to combine. 2: Use 4-5 small mason jars or ramekins and equally divide the mixture. Gently smooth down the top. 3: Top each with roughly 1 teaspoon of peanut butter and smooth this over the mousse. 4: Next, add the chocolate and the coconut oil to a microwave-safe dish. Microwave in 30 second increments until melted completely, mixing at each interval. 5: Spoon a spoonful of the chocolate over each dish and spread to cover the mousse. Top with peanuts, if using. 6: Place in the refrigerator for at least 30 minutes, until the chocolate solidifies.View original recipe
