
Pineapple Basil Fried Rice
This easy pineapple basil fried rice is a perfect summer meal, featuring sautéed chicken, chopped pineapple, and a delectable spicy almond butter sauce. What you need
tbsp tamari soy sauce

tbsp sriracha

tbsp water

cup onion

tsp dried ginger

tsp salt

cup cooked rice

red bell pepper

fl oz lime juice

cup almond butter

tsp garlic powder

cup raw cashews

cup pineapple

tbsp ghee

cup basil
cup chicken breast
Instructions
1: Heat ghee or coconut oil over medium high, add chopped chicken breast, seasoned with salt and pepper, and stir fry for 2 minutes. 2: Add chopped pineapple and stir fry for another 3 minutes. Remove and set in a bowl. 3: Add 1 more teaspoon oil then chopped onion and red bell pepper. Sauté for about 4 minutes, then add chopped basil. 4: Add cooked rice and mix to combine. Then add tamari soy sauce, coconut aminos, salt, garlic powder, dried ginger, and sriracha. Cook for about 5-7 minutes. 5: Add cashews, juice from half a lime, and 1 more tablespoon of basil. Add chicken and pineapple back in. Cook for another 3-4 minutes. 6: Serve inside half a pineapple. 7: For the sauce, blend almond butter, coconut aminos, lime juice, water, and sriracha until smooth.View original recipe
