
Pistachio-Date Cannolis
Delicious and easy-to-make Pistachio-Date Cannolis with a creamy filling made from pistachio butter, Greek yogurt, and maple syrup. These treats are rolled using Medjool dates and are finished with crushed pistachios and melted chocolate for an indulgent yet healthy dessert.

Instructions
1: Make the pistachio butter by blending 2 cups of roasted/salted pistachios until smooth (about 10 minutes). 2: In a small bowl, mix the pistachio butter, Greek yogurt, and maple syrup until smooth to make the filling. 3: Open the Medjool dates and place them on parchment paper. Roll them between two pieces of parchment until flat. 4: Spoon about 2-3 teaspoons of the filling onto each date and roll them like a cannoli shell. 5: Dip the edges into crushed pistachios and place them onto a lined sheet pan. Drizzle with melted chocolate and top with more crushed pistachios. 6: Freeze the cannolis for 10 minutes until the chocolate hardens.View original recipe
