Delicious and satisfying plant-based quesadillas filled with roasted sweet potatoes, asparagus, and vegan Gouda cheese. Topped with a creamy jalapeño cilantro avocado crema made with ripe avocados, coconut cream, cilantro, lime juice, and more. Perfect for a Meatless Monday meal!
What you need

bunch asparagus

tsp salt

cup cilantro

tbsp coconut cream

tbsp lime juice
Instructions
1: Heat a non-stick skillet on medium-high heat. 2: Place one tortilla down in the skillet. 3: Add roasted asparagus and cooked sweet potatoes on top of the tortilla. 4: Add some vegan Gouda cheese on top. 5: Place the second tortilla on top and press down gently. 6: After about 2 minutes, flip the quesadilla. 7: For the jalapeño cilantro avocado crema, process avocados, coconut cream, cilantro, jalapeño sauce, lime juice, coconut aminos, and salt in a food processor until smooth.View original recipe
