
Plantain Fiesta Nachos
A delicious and budget-friendly way to enjoy nachos with a Mexican twist using air-fried plantain chips, topped with fresh ingredients and fried eggs.
What you need

salsa

tsp garlic powder
cheese
tsp salt

splash hot sauce

black beans

tsp paprika

tortilla chips

tsp chipotle powder

Instructions
1: Slice up 3 plantains and spray with avocado oil. 2: Season the plantains with chipotle powder, salt, garlic powder, onion powder, and paprika. 3: Air fry the plantains at 350°F for about 10 minutes, flipping halfway. 4: Lay tortilla chips in a cast iron skillet and brush with hot sauce. 5: Add tomatoes and sliced jalapeños, along with cheese if desired. 6: Bake the skillet at 400°F for about 7-10 minutes. 7: Remove from oven and top with greens, avocado, fried eggs, cilantro, and crumbled cheese. 8: For the chilaquiles, layer tortilla chips with salsa in the skillet, adding more chips and salsa, then cheese if desired. 9: Bake again at 400°F for about 7-10 minutes and top with greens, avocado, tomato, black beans, fried eggs, crumbled cheese, scallions, and cilantro.View original recipe
