
Quesadillas with Pickled Onions
Crispy prosciutto, mozzarella, and roasted red pepper quesadillas served with quick-pickled onions. A fast and delicious 10-minute lunch option that can be made even when you’re busy. The pickled onions marinate in a sweet and tangy mixture for an added kick.
What you need

cup white vinegar
tsp dill seed

tbsp agave

red onion

tsp mustard seed

tsp salt

prosciutto

cup water
Instructions
1: Crisp the prosciutto over medium high until crispy and remove from the pan. 2: Heat the tortillas on medium high. 3: Top tortillas with cheese, sliced roasted red peppers, and prosciutto. 4: Once the cheese is melted, fold the tortillas over. 5: For the pickled onions, heat white vinegar and water, then add agave, salt, dill seed, and mustard seed. Bring to a boil. 6: Turn off the heat and add the thinly sliced red onion, stirring well. 7: Allow to marinate for 30 minutes before storing in a jar in the fridge.View original recipe
