
Quinoa Salad with Dressing

What you need

tbsp rice vinegar
cup english cucumber

cup cooked quinoa

cup fresh cilantro

cup red cabbage

tsp sesame oil

tbsp soy sauce
tbsp fresh mint

cup red bell pepper

cup water

tbsp almond butter

cup carrot

cup scallion

cup almond
tbsp maple syrup

tbsp white miso
Instructions
1: Make the dressing. Add the water, carrots, almond butter, soy sauce, rice vinegar, maple syrup, ginger, miso paste, and sesame oil to a high-speed blender. Blend until smooth. Add another tablespoon or two of water for thinner dressing. 2: Make the salad. Add the quinoa, carrots, cabbage, cucumber, peppers, scallions, cilantro, mint, and almonds to a large mixing bowl.
