Instructions
1: In a bowl, whisk together 2 tbsp olive oil, 1.5 tbsp agave, juice of 2-3 limes, pinch of salt, 1 tbsp tajin, and 2 tsp cumin to create the dressing. 2: Season shrimp with 1/2 tsp salt and 1 tsp cumin. 3: Heat a pan over medium-high heat, add 1/2 tbsp olive oil, and cook shrimp for 2 minutes per side until pink and cooked through. 4: In a large bowl, combine 2 cups cooked quinoa, 1 cup finely chopped pineapple, 1 pint chopped cherry tomatoes, 1 minced jalapeño, 1/2 minced red onion, and 1/2 cup chopped cilantro. 5: Drizzle with dressing and toss to combine.
