Quinoa Shrimp Salad
A healthy and delicious quinoa salad featuring seasoned shrimp, fresh pineapple, cherry tomatoes, jalapeño, and cilantro, all brought together with a tangy dressing.
What you need

Instructions
1: Season the shrimp with 1/2 tsp of salt and 1 tsp of cumin. 2: Heat a pan over medium-high heat and add 1/2 tbsp of olive oil. 3: Cook the shrimp for 2 minutes per side until done. 4: In a bowl, mix the dressing with 2 tbsp olive oil, 1.5 tbsp agave, juice of 3 limes, pinch of salt, 1 tbsp tajin, and 2 tsp cumin. 5: In a large bowl, combine the cooked quinoa, finely chopped pineapple, chopped cherry tomatoes, minced jalapeño, minced red onion, and chopped cilantro. 6: Drizzle the dressing over the salad and toss gently to combine.View original recipe
