What you need
head cabbage

tbsp capers

tsp salt

oz tahini

bunch arugula
pepper

oz gorgonzola
cup walnut

medjool dates
Instructions
1: Preheat the oven to 425°F. 2: Add the cabbage to a large sheet pan, drizzle with olive oil, and season with salt and pepper. Place in the oven for 25-30 minutes, tossing a couple of times, until browned and tender. 3: While the cabbage roasts, make the crumble by chopping the dates on a cutting board, then adding the walnuts and chopping again, followed by arugula and gorgonzola. Combine and chop until well mixed, then add capers and season with salt and pepper. 4: Plate the cabbage and add the crumble on top. Add tahini if using.View original recipe
